In the marine world, the term “providor” has a particular meaning that is more complex than the term “provider”. A “providor” specialises in those products (mainly food) suitable for use on long sea voyages. It is still in common use in much of the English-speaking world and its meaning is well understood. Occasionally, I have also seen the spelling “providore” and, while it may be a spelling particular to a local area, its meaning is still well understood. “English” describes a wide variety of subsets of an international Lingua Franca. The notion of a correct spelling would have been foreign to those who wrote the first Oxford.
When I was taught English, the word “Providor” was the one who provided originally and “Provider” was the one who gave out the provision.
